Celebrity chef Jose Garces is set to open two new restaurants in Allentown this year. Rosa Blanca, a Cuban cafe and rum bar, will debut in the first quarter at The Nines apartment building. Okatshe, a Japanese-style restaurant, will follow in the second quarter at a yet-to-be-announced downtown location. Rosa Blanca will feature a variety of Cuban dishes and drinks, accommodating around 70 guests. Garces expressed enthusiasm for investing in downtown Allentown, highlighting the area's growth and potential for dining and entertainment. City Center Investment Corp. noted that his choice reflects the city's transformation.
