Ludhiana: A veterinary college has introduced new cheese options made from buffalo and goat milk. This initiative aims to help dairy farmers increase their profits and reduce waste. Guru Angad Dev Veterinary and Animal Sciences University (GADVASU) showcased five types of cheese at a recent event for farmers. The cheeses include mozzarella, bocconcini, ricotta, and two types of goat cheese: chevre and feta. Professor Neetika Goyal explained how these cheeses can provide better financial returns for farmers. For example, if a farmer sells 100 liters of milk, they typically earn around ₹6,000. However, by making mozzarella cheese, they could earn about ₹7,200 from 12 kilograms of cheese. Additionally, farmers can use the leftover whey to create ricotta cheese. This process can generate another ₹3,500, boosting their overall income. Goyal emphasized that making these cheeses requires minimal equipment, as many farmers already produce paneer. Professor Parveen Kumar Singh added that they want farmers to know there are more options beyond paneer. He believes these cheeses can be made with low investment and offer high returns. The university plans to train interested farmers through various programs in the future.
