Mary Berry's falafel recipe surpasses store-bought versions
Mary Berry has shared a recipe for homemade falafel that she says tastes much better than store-bought versions. This dish is healthy and tasty, making it a great weeknight meal option. The recipe takes about one to two hours to prepare and an additional 10 to 30 minutes to cook. It serves six people and features pickled red cabbage and a whipped feta dip. To start, the pickled cabbage involves heating white wine vinegar and sugar in a saucepan. After dissolving, you pour it over shredded cabbage and onion, season with salt, and let it sit for one hour. Next, you prepare the falafel by frying shallots and garlic with spices, then mixing them with other ingredients including chickpeas, herbs, and egg. The mixture is shaped into patties and chilled in the fridge. For the whipped feta dip, blend feta and Greek yoghurt in a food processor. Fry the falafel patties until golden brown, and serve them with the pickled cabbage and whipped feta on plates or as a sharing platter.
