Radishes are rich in antioxidants, vitamin C, calcium, and magnesium. These nutrients help boost collagen production and improve skin health. They also have a high water content, which keeps skin hydrated. Kaliga says that radishes can be eaten roasted, pickled, steamed, or sautéed, but warns against overcooking to preserve their vitamin C. Asparagus is another spring vegetable that can benefit skin. It is high in vitamin E, a powerful antioxidant that protects the skin from damage. The vitamin C in asparagus also aids in collagen production, helping to keep skin youthful. Kaliga recommends roasting or grilling asparagus with a bit of healthy fat. Red cabbage, which costs about £1 per pack, is another great choice. It contains more antioxidants and polyphenols than green cabbage, making it better for skin protection. Kaliga suggests massaging shredded red cabbage with olive oil or salt to soften it before adding it to salads. This not only enhances its flavor but also maximizes its skin benefits.
