Sydney's Paddy's Markets unveils $20 million food mega-hub
Sydney's historic Paddy's Markets is set to unveil a new food mega-hub on March 26. Named Hay St Market, the project has cost $20 million and features nearly 50 new vendors. This includes a butcher, florist, greengrocer, and dumpling stall, employing up to 400 staff. The Hay St Market is designed to reflect international food markets, offering a space of 3,000 square meters with over 25 different cuisines. It aims to create an eat-in experience for locals and visitors alike. Celebrity chef Luke Nguyen is among the notable figures involved, contributing to several food outlets. Joseph Murray, the group CEO of Doltone Hospitality Group, leads the project. He emphasized a goal to honor the cultural diversity of Sydney's food scene. Vendors also include a Korean bar and shops inspired by Dickens-era decor, helping create a unique atmosphere. Construction of the market started after a legal dispute with existing market traders. The new hub is expected to attract younger audiences to the area. With hopes to double the current annual visitor count of about 5 million, it positions itself similarly to London's Borough Market. Murray noted that the market fills a gap for central food experiences in Sydney. It plans to operate daily for breakfast, lunch, and dinner, aiming to become a key part of the local community.
